Living Fresh and Free

Celiac disease is an auto-immune disease that affects 1 out of 100 people worldwide. This disease is receiving more recognition by the food industry as they become aware of those who cannot digest wheat-based products. Those suffering from celiac disease must avoid these products or their bodies immune response attacks the small intestine. If this occurs too often then the body loses its ability to absorb nutrients into the body. Untreated celiac disease can lead to other autoimmune disorders like Type 1 diabetes, MS, infertility and miscarriage among others. The only treatment for this is a lifelong adherence to a strict gluten-free diet. Meals must be prepared away from gluten-based products because even minimal exposure to those products can trigger an attack.

Many restaurants are now offering gluten-free alternatives to their traditional menus. This includes DRTC’s Papa Murphy’s location. Papa Murphy’s Take ‘N Bake Pizza offers new, medium-sized, gluten-free pizza crust for those who choose gluten-free alternatives. Papa Murphy’s was recently selected as #1 by Consumer Reports in the categories of food, value, staff and speed over other pizza chains. The pizza crust is a result of an agreement between Papa Murphy’s and Udi’s Gluten Free. Udi’s gluten-free crusts are lightly dusted with rice flour and can be baked or grilled.
